IN the distant provinces of northwest Argentina, where the dry Chaco desert meets the foothills of the Andes, are some of the last untrammeled stretches of Latin American wilderness. Here the descendants of the Inca warriors who first met the Spanish and the heirs of the conquistadors have been joined in four centuries by Lebanese and Syrian sheep ranchers, Korean merchants and Italian wine-makers. This is Argentina's outback, where not all the hotels have hot water or central air-conditioning, and the filling stations can be more than 50 miles apart, where condors fly and llamas graze alongside women in braids and derby hats. Despite its centuries-old churches, pre-Columbian ruins, and the stunning heights of the Bolivian altiplano, the outback remains untouched -- by tourists and Argentines alike. Vacationing portenos, as residents of the capital are known, usually leave Buenos Aires for the beaches at Mar de Plata or the ski trails of Bariloche.
